Vegan pancakes that taste like regular pancakes

So I want to share my favorite (so far) vegan breakfast recipe. This is actually a great recipe for flexitarians and it's also great if you're counting calories. Two servings of these pancakes is just over 300 calories (of course you have to count the maple syrup, too, so maybe it's a little more than just over 300 calories).

Also, they taste just like any other pancake. The absence of dairy milk, butter, eggs, or whatever else you usually put into pancakes does not detract from the flavor at all.

Anyway, the recipe is from Merle O'Neal at Tasty.com and it's called "The Fluffiest Vegan Pancakes," which seems like a pointless brag kinda but they are pretty danged fluffy so ...

To make them, you'll need:
  • 1 cup flour
  • 2 tbsp sugar (the recipe calls for organic sugar but what do you know, using regular sugar didn't seem to affect the results at all)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup non-dairy milk (I used almond, my favorite)
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • Maple syrup to serve

Mix the dry ingredients together. Add the non-dairy milk, vinegar and vanilla and stir vigorously until all the lumps are gone.

Let the batter sit for a few minutes while you make your coffee.

Cook them up on a hot griddle like you would any other pancake.
